In Hawaii, we even massage our fish. The technique of massaging, or turning and mixing by hand the ingredients with the raw salmon gives this classic lu'au dish the special name of "lomi lomi salmon"
Be sure and wash your hands before preparing!
Ingredients:
1 pound salt salmon, shredded
4 pounds ripe tomatoes, small dice
3/4 pound Maui onion, finely diced
5 ounces scallions, whites and greens, coarsely chopped.
Add chili pepper flakes, cucumber for variations.
Preparation:
Mix all ingredients together by hand ('lomi lomi' means "to massage" in Hawaiian). Let cool in refrigerator or mix with ice
Lomi-lomi salmon is classic and an integral part of most Hawaiian parties, or gatherings, such as traditional luaus and can be considered a Hawaiian ethnic food.
